Expert Notes
South Bay Blondes are the house oyster of Wulf's Fish, a seafood wholesaler, grown for it by Ben Suddard in Wareham, Massachusetts. The Suddard family has worked oysters there for more than a century. Seed starts in an upweller and moves to float cages, where tumbling leaves a smooth, dense shell about 3 to 3.5 inches across. Wulf's describes a salty, slightly sweet brine with some minerality and hints of butter, celery and eelgrass. A Boston chef it quotes puts it more simply: slightly sweet but very briny. The Suddard family has been oystering in Wareham for more than 100 years. According to Wulf's Fish, the coastal leases the family works today were granted by a Civil War general to the late Ben Suddard's great-grandfather. Wulf's sells the oysters as its exclusive house brand.
- Cultivation Method
- upweller, then float cages; tumbled
History & Background
Wulf's Fish describes Wareham as the outer entrance of Cape Cod and paired South Bay Blondes against a Barnstable oyster in the first month of its oyster club, in October 2024. Boston Provisions Market sells them singly and repeats the size, 3 to 3.5 inches across.
One retailer, La Mer in Montreal, says the oysters are raised on the bay floor. Wulf's, which owns the brand, describes float cages, and this profile follows Wulf's.
