How these guides work
Every fact comes from the restaurant's own website on the date shown. When a menu only says "daily selection", we say so and do not guess. Raw-bar lists change daily, so each guide is a snapshot: good for learning which oysters a place tends to carry and what they taste like, not a promise of what is on ice tonight.
