About Steamboat Creek Oyster Farm

Aubrey Sanders, who grew up in Memphis and worked on a Charleston oyster farm after business school, runs the farm with Michael Kalista, a former shucker at Delaney Oyster House. Both had worked on a shellfish farm before applying for the Steamboat Creek site in 2019. Husk, one of its customers, says the farm sells to a select group of Charleston restaurants.

A farmed South Carolina oyster from Steamboat Creek at the north end of Edisto Island, sold mostly to Charleston restaurants. A medium, deep-cupped oyster with plump meat, a salty start and a sweet finish. Not the Steamboat oyster of Washington State.
