About Baja Shellfish Farms

Baja Shellfish Farms calls itself a family-owned company started by oceanologist Sergio Guevara. It began farming Mediterranean mussels in the open water off northern Baja California in 1991, added oysters in 2007 with the Kumiai, and ten years later introduced two tumbled oysters, Pai Pai and El Chingón.

A Pacific oyster from Mexico's Baja California peninsula, grown on racks at Guerrero Negro and then held for two weeks in cold open water off Ensenada. Crisp and briny up front, with cucumber and seaweed notes and a long sweet finish.
